1. Flour

Flour is one of the major ingredients for most dessert recipes. It could be either All Purpose Flour, Self-Raising Flour, Cake Flour, or Bread Flour. All purpose flour and self raising flour are the basic flour you must have, or you can stock either on. The difference between all purpose and self raising is self raising has been added baking powder and baking soda, which makes it convenient when baking a cake, muffins, or any other that need raising so cakes fluffy and not dense. However, baking powder is not the only ingredients need for cakes to rise and fluffy.

2. Baking Powder + Baking Soda

Both baking powder and baking soda very useful ingredients to have, although sometimes you may not need it as often, and it last quite sometimes. But if you only have all purpose flour, then it will be important to have.

3. Butter

Unsalted or salted butter must have daily ingredient at home. If you only have unsalted butter, then just add a pinch of salt to your recipes. It is completely fine stocking up unsalted butter. Not much different between unsalted and salted butter. However, spread butter sometimes works just fine too. For some recipes, it is important to use room temperature or cold butter as requested or your recipes won’t turn as good.

4. White Vinegar

Most used is white vinegar, and if you don’t have any, a squeeze of lemon juice a perfect substitute as well. Ratio is 1:1 substitute. White vinegar usually mixed with milk to create buttermilk. 1 cup of milk added 3 tablespoons of white vinegar and wait for at least 5 minutes to make it curdles.

5. Dairy

Dairy can be form of milk, double cream, sour cream, or buttermilk and it all depending on the recipes. It is good to keep milk in the fridge, and if recipes needed double cream / sour cream / buttermilk , just add white vinegar to milk for best substitute.

6. Eggs

Eggs usually we stocked up in kitchen and it basically available daily. As mentioned above, baking powder and baking soda help cakes rise fluffy and not dense. In this matter, eggs does the same as well. With all 3 ingredients combination, cakes recipes will definitely turns out soft and moist. Again, it all depends not the recipes method / instructions. Eggs substitute that I would recommend is Egg Replacer by Bob Mill, chia seed or flex seed not the best substitute for eggs.

7. Yeast

Instant yeast can be used to make bread, rolls, pizza crust, or bun. Yeast need to be store in room temperature drawer / cabinet, no direct light or heat, or it can kills yeast. Yeast has better activation when mixed with lukewarm water/milk and a little sugar (depends on recipes). When mixing yeast directly with flour and added lukewarm water, it tends not get activated (based on my experiences), unless you have special bread maker machine. There is no substitute for yeast.

8. Cocoa Powder

Cocoa Powder good to have in your kitchen, it also can be used to make chocolate milkshake besides for baking.

9. Oil

For most baking, canola oil is the best option if needed but you can substitute with any oil that available in your kitchen such as sunflower oil, or extra virgin oil. Coconut oil can be used as well but its has very powering flavour and you may taste it in your baking.

10. Honey / Sugar / Brown Sugar

Every kitchen has honey and if you don’t, can substitute with maple syrup or agave nectar. Ratio is 1:1 substitute. Brown sugar can be substitute with white sugar. Not much different in flavour or texture so if you only have white sugar, it is fine.

Low Carbs Must Have Baking Ingredients

1. Almond Flour / Gluten Free Flour

Almond flour is the most used main ingredients for low carbs or Keto dessert recipes. Gluten free flour I would not recommend it as finished baked texture tasted like sandy (after-taste). Almond flour is the best substitute for any flour but it would not turns out the same as using normal flour. For some recipes, using almond flour will have your cake dense / dry and not moist. Only certain recipes will turns out moist and not dense. Amount of liquid ingredients play a crucial part for recipes using almond flour.

2. Stevia sugar

Any stevia sugar that available can be used as it’s more organic, less calories and healthier that white sugar. Ratio 1:1/2 between white sugar and stevia, and usually depends on the which stevia brand you have.

3. Almond Milk / Soy Milk

Normal milk replace with almond milk or soy milk or whichever milk of your choice. If you want to bake low carbs dessert recipes and don’t have almond milk, normal milk is fine too. Ratio is 1:1 substitute.
